Carrot Cake!

Composing this post while hungry is not a clever idea - I am starving, time for lunch.

I am a big fan of baking and I am trying to do it on a regular basis, this was my first attempt at carrot cake and wow I surprised myself and even better it was gobbled up!!!


So you will need:

For the cake:

2 eggs * 200g soft light brown sugar * 300g of grated carrot * 180g self-raising flour * pinch of salt * 1/2 tsp bicarbonate of soda * 1 tsp ground cinnamon * 1/2 tsp nutmeg * 1/2 tsp mixed spice * loaf tin




Preheat the oven to 150 degrees, oil and line the tin with greaseproof paper.

Beat the eggs in a large bowl, add the oil, brown sugar and grated carrot. 




Sift in the flour, salt, bicarbonate of soda, cinnamon, nutmeg and mixed spice ad bring the mixture together with a wooden spoon. 


Pour the mixture into the loaf tin, smooth the mixture and pop in the oven for 1 - 1 1/4 hours, to check see if a knife inserted in the middle and comes out clean.



Allow the cake to cool for 5 minutes before taking it out of the tin. Cool on a wire rack.

For the icing:
250g cream cheese * 50g softened butter * 1 tsp vanilla extract * 275g sifted icing sugar * finely grated orange zest





Beat the cream cheese and butter together in a bowl until combined. 


Add the vanilla extract, icing sugar and orange zest and mix to combine. The icing should be smooth and thick.




Make sure the cake is cool before applying the icing.



Cut into slices and enjoy!!!!
